Multiple admin accounts, can only use one?

I have windows server 2016 as a little home server (also this is my first post so bear with me) I turned it into a domain controller by installing AD DS off the server manager console.

Later I decided I did not need it and removed it. Since the admin account was on the domain is there any way to sign back into that account? I still have the files from it and can't afford to lose them.

When I sign in with the local account (using WINSERVER\Administrator) it doesn't use the correct user folder, as can be seen here. It uses the 000 folder and I have no idea how to sign onto the other users.
