chicken breasts thawing on counter for ~5 hours

My mother always thaws meat on the kitchen counter. I've read that it's not safe to thaw on the counter. I've never been sick from it(afaik) and when I've told her it's not safe, this is her excuse. I'm considering not eating it(making something else for myself). What would you do?
